How To Make Mock Tuna Salad

Ingredients
- 2 cans of chickpeas, drained and rinsed
- 1/4 cup of diced red onion
- 1/4 cup of diced celery
- 2 tablespoons of chopped dill pickles
- 2 tablespoons of vegan mayonnaise
- 1 tablespoon of Dijon mustard
- 1 tablespoon of lemon juice
- Salt and pepper, to taste
- Optional toppings: sliced avocado, tomato, lettuce
Instructions

In a mixing bowl, mash the chickpeas with a fork or potato masher until they resemble tuna flakes.

Add the diced red onion, celery, dill pickles, vegan mayonnaise, Dijon mustard, lemon juice, salt, and pepper to the bowl. Mix well to combine.

Taste and adjust the seasoning if needed.

Serve the mock tuna salad on bread, in lettuce cups, or on top of a salad.
